Orange, Almond Salad Recipe

1      head of Romaine Lettuce, washed, dried and torn into pieces
1      cup of chopped celery
1/2   Red Onion, sliced into very thing rings
2      11-oz can of Mandarin Oranges, drained
1      2-oz. package sliced Almonds or approx. 1/4 cup

Tip:  Soak your onion slices in ice water for 15 minutes and drain to soften the onion flavor

Dressing

1/4      cup of Canola Oil
2         Tb. Tarragon Vinegar…you can add more if you would like it a little more tart
2         Tb. granulated sugar
1         tsp, hot pepper sauce (like Tabasco)
1/2      tsp. salt
1/2      tsp. pepper

Tip:  If you do not have Tarragon Vinegar on hand, substitute White Wine Vinegar and add 1 tsp. dried Tarragon.

Whisk dressing ingredients together, pour over salad and mix until salad ingredients are covered.
