Spinach, Apple salad – 6 – 8 servings

Dressing:

1/4   cup apple cider vinegar

1/4   cup pure maple syrup

1/3   cup olive oil

          pinch of salt & pepper

Whisk  all of  the dressing ingredients together and set aside.

Salad:

1       bunch of baby spinach, wash, drained, stemmed, or 12-oz. bagged spinach.

2       red apples, like red delicious, halved, cored, skin left on and thinly sliced.

1        cup walnut halves, toasted in a dry skillet over low, until crispy

Combine spinach, apples, and walnuts and pour dressing over the salad and toss until leaves are coated.  Your salad is ready to serve.

Tip -  Garnish salad with pomegranate seeds (my favorite especially at Christmas)  or shredded cheddar cheese.
