Easy Cheeseburger with Pesto and Mozzarella Recipe: Serves 4
1 1/2       lb. hamburger…keep in mind very lean hamburger is often dry when it’s cooked, so think about using ground chuck
1 1/2Â Â Â Â Â Â Â cups grated mozzarella or Italian blend cheese
1/3Â Â Â Â Â Â Â Â Â Â Â Â cup packed, finely minced fresh basil
1/4Â Â Â Â Â Â Â Â Â Â Â cup finely minced onion
1/4Â Â Â Â Â Â Â Â Â Â Â cup pesto
salt & pepper as desired
1                large tomato, washed, and sliced 1/4 inch thick
lettuce leaves to top hamburger
Mix the hamburger, grated cheese, fresh basil, and onion until blended. Form hamburgers into 4 patties, add salt and pepper as desired .  Grill hamburgers to desired level of doneness…approx. 3 – 5 minutes per side.  Toast hamburger buns on the hot grill. Once golden, place hamburgers on the bottom half of the buns, spread a layer of pesto over the top half of the buns, and top the hamburger with tomato and lettuce.
