Boiled New Potatoes Recipe:  serves 4 – 6

1 1/2        lbs. new red potatoes…also called “B” potatoes, washed

1/4           cup butter, melted…more if desired

1/4           cup chopped parsley

salt and pepper to taste

Take the washed new potatoes and using your Grip-Ez Peeler slice around each potato cutting away a ribbon size width of potato skin leaving a  circular band of unpeeled potato.  Place the potatoes in a medium saucepan…I like the Paula Deen 3qt. Covered Saucepan from her Signature 12-Piece Stainless Steel Cookware Set…and cover with cold water.  Bring the potatoes to a boil, reduce to a simmer and cook until the potatoes are tender when pierced with a sharp knife, about 15 minutes.  Drain the potatoes, pour melted butter over the potatoes and stir to coat.  Sprinkle in the parsley and stir to cover.  Serve alongside corned beef and cabbage or with another meal of your choice.
