Celebrate St. Patrick’s Day with Irish Recipes:
St. Patrick’s Day is a national holiday in Ireland and the term wearing of the green means to wear a shamrock on your clothing. The shamrock and green ribbons became a symbol of the holiday dating back to the 17th century. The 3 leaved shamrock was used to symbolize the holy trinity.  Today, shamrocks often just mean good luck.  The celebrations of the day have changed extensively, with many people becoming “honorary” Irish for the day and celebrating with good food, good drinks, and good friends.

YUMM-O! Leave it to Kerri, a family friend, busy mother of three, and a volunteer baker & cook for many events to perfect this recipe! She was gracious enough to share it with home cooking connection. Think about serving this at your next bridal or baby shower, packaging a few up in pretty bags for favors, or putting them on your next dessert buffet…people love 2 bite sweets. Thanks Kerri!
This pasta recipe has everything I love….a creamy consistency, shrimp, garlic, and Parmesan Cheese. It is a bit rich, so a simple green salad and some french bread are all you need to serve on the side. It’s also a quick recipe that you can have on the table in less than 30 minutes.
Make this dish for dinner along with some boiled potatoes and you are sure to feel lucky! Make your life easy, and cook it in crock-pot, so that all you have to do at the end of the day is boil a few potatoes while you relax with your favorite Irish beer. Buy a few extra corned beef briskets and store them in the freezer, so you can pull this easy dinner out of your hat later this spring.
You can’t ask for a an easier side dish than this. It’s an attractive, quick addition to meatloaf, roasted chicken or corned beef and cabbage and by leaving most of the skin on the potato you add a little fiber too your diet.
This recipe comes to Home Cooking Connection from Lisa Bedell. She is a wonderful cook, baker, and cake designer. She has her own business called Valley Custom Cakes. One look at her on-line gallery at www.valleycustomcakes.com, and you’ll know she can create anything! Thank you Lisa for sharing this cold weather favorite. Soups are a terrific first course and this rich recipe will make fantastic main dish served with a hearty dinner roll.
This light, airy dessert is divine. Don’t be intimidated by the number of steps required to prepare this mousse as it really is not difficult. Since this luscious dessert needs to be chilled, you can make it well ahead of time if you are serving it for a dinner party. Once you try this Home Cooking Connection favorite I think you will be making it over and over again!
Your kitchen will smell wonderful as this chicken dish simmers. It’s good for you, low in calories, and can be prepared in advance and reheated quite well. It incorporates tomatoes that we know are a must have in our diets. I also like that it’s relatively inexpensive to prepare. This recipe lends itself to interpretation, so add sliced red peppers, omit the mushrooms, and add olives…suit your mood!
